Message from a Cape Town chick in London...

Happy Freedom Day South Africa!



What an inspirational day, not just to South Africans but to the world. The celebration of positive change and democratic freedom, all thanks to an amazing human being, Nelson Mandela, a true modern day hero, my role model. So while you're out enjoying your freedom within South Africa, lets not forget the people who made this all possible. Its impossible not to be inspired...

My Bucket List...








1. Have a family of my own and create a crazy, beautiful, happy home
2. Visit New York City
3. Take lots of photographs of memorable moments of my life
4. Going skiing or attempt snow boarding
5. Own a Louis Vuitton bag or vintage Chanel
6. Get a seahorse tattoo, or less painfully own a live seahorse as a pet :-)
7. Try my hand at sewing and creating my own cute dresses I love so much!

Janice's favourite recipes...

French style honey & mustard chicken

Ingredients:


  • 4 tbsp crème fraîche
  • 2 tbsp grainy mustard
  • 2 garlic cloves , crushed
  • 150ml chicken stock
  • 8 skin-on chicken drumsticks
  • and thighs
  • 500g baby potatoes
  • 200g green beans
  • 2 tbsp clear honey
  • ½ small bunch tarragon, roughly chopped

















Method:
Heat oven to 200C/180C fan/gas 6.
Mix together the crème fraîche, mustard, garlic and stock with some seasoning. 
Arrange the chicken, skin-side up, in a roasting tray just large enough for the chicken and vegetables.
Tuck the potatoes and beans in between the chicken pieces. 
Pour over the stock mixture then season the chicken and drizzle with honey. 
Cook for 40-45 mins until the chicken is cooked through and the potatoes tender. 
Scatter over the tarragon before serving

Things I'm loving right now...

2. Loving Dove Hair products right now and my hair is loving me for it too.

4. My hot water bottle never leaves my side since I've been back in London.
5. Wearing bright nail varnish cheers me up during the last dull dreary days of winter, Coral by Max Factor is my favourite.

Places I've been...

Janice's favourite recipes...





Ingredients

  • 350g pasta shells
  • 200g pack trimmed fine beans, cut into short lengths
  • 200g can tuna in oil
  • Grated zest of a lemon
  • 1 heaped tbsp small capers
  • Generous pinch of chilli flakes
  • Olive oil for drizzling
  • Method
Meanwhile, tip the tuna and its oil into a bowl and flake the fish, keeping the pieces quite large. 
Stir in the lemon zest, capers, chilli and plenty of salt and pepper.
Drain the pasta and beans, return them to the pan and toss with the tuna mixture. 
Add a little olive oil if you need to moisten everything. 
Serve the tuna and lemon pasta on its own or with a tomato and onion salad.

Add the beans and cook for a further 3 minutes until both the pasta and beans are just tender.
Cook the pasta in boiling salted water for 8 minutes.

Ramblings of the day...

The past 5 months...

Wow! Not sure where to start, so much has happened, its fitting to say the theme of my life is CHANGE.

Both good and bad change has occurred in the past 5 months...the biggest was getting divorced. 

I moved to Cape Town for a few months, during this time, I done alot of soul searching, partying, crying, laughing, catching up with good friends and just appreciating what I have in my life.

I also became an aunt to my niece, beautiful little Ella, I turned 30 and have now moved back to London. 

And this is where the next chapter in my life story will begin....so, I look forward to posting more regularly from London, till then..
